Grilled Meatballs

This recipe is the winner of the 2024 Beef Brawl Cooking Competition!

Ingredients:

  • 1 lb. ground beef
  • ½ cup bread cubes
  • 3 tablespoons milk
  • 1 pinch chili flakes
  • 1 pinch fennel seeds
  • ¼ teaspoon ground black pepper
  • 1/3 cup diced onion
  • 1 ½ teaspoon minced garlic
  • ¾ teaspoon extra virgin olive oil
  • 1 ½ teaspoon Worcestershire sauce
  • 1 ½ teaspoon shredded pecorino Romano
  • 1 tablespoon minced Italian parsley
  • 1 teaspoon kosher salt

Directions:

  1. Soak the bread cubes in the milk until softened, then add meat
  2. Sauté the onions and garlic in the olive oil with chili flakes and fennel seed until browned. Cool completely
  3. Add black pepper, diced onion, minced garlic, extra virgin olive oil, Worcestershire sauce, pecorino Romano, Italian parsley, and kosher salt and mix thoroughly.
  4. Shape into balls and grill until medium rare
  5. Serve with basil pesto
