Ingredients:
- 4 tablespoons olive oil
- 3-4 lbs. roast of your choice
- 1 medium onion, roughly chopped
- 1 lb. baby red potatoes, halved
- 4 large carrots, peeled and chopped
- 1 stock celery
- 4 garlic cloves, peeled and minced
- 1 bay leaf
- 1 teaspoon salt
- 1 tablespoon garlic powder
- 1 teaspoon pepper
- 4 springs fresh thyme
- 2 tablespoons parsley, dried or fresh
- 1-quart low sodium beef stock
- 1-pint stout beer
Directions:
- In a large pot, heat olive oil over medium heat, add roast and sear all sides.
- Add onion, potatoes, carrots, celery, garlic, bay leaf, and salt, cook until lightly browned, add roast of your choice.
- Add garlic powder, pepper, fresh thyme, parsley. Stir until well combined.
- Add stout beer and beef stock, cover and let simmer on low heat for 3 hours.
- Garnish with fresh parsley and serve.
