Beer Pot Roast

Ingredients:

  • 4 tablespoons olive oil
  • 3-4 lbs. roast of your choice
  • 1 medium onion, roughly chopped
  • 1 lb. baby red potatoes, halved
  • 4 large carrots, peeled and chopped
  • 1 stock celery
  • 4 garlic cloves, peeled and minced
  • 1 bay leaf
  • 1 teaspoon salt
  • 1 tablespoon garlic powder
  • 1 teaspoon pepper
  • 4 springs fresh thyme
  • 2 tablespoons parsley, dried or fresh
  • 1-quart low sodium beef stock
  • 1-pint stout beer

Directions:

  1. In a large pot, heat olive oil over medium heat, add roast and sear all sides.
  2. Add onion, potatoes, carrots, celery, garlic, bay leaf, and salt, cook until lightly browned, add roast of your choice.
  3. Add garlic powder, pepper, fresh thyme, parsley. Stir until well combined.
  4. Add stout beer and beef stock, cover and let simmer on low heat for 3 hours.
  5. Garnish with fresh parsley and serve.
